Special Pachadi (My special Pachadi with Eggplant and Bitter Gourd)
My special Pachadi, is a recipe adapted from my mother’s recipes. She is always making delicious Yoghurt based dishes like this. Eggplant and Bitter gourd are two vegetables, that get hated on a LOT! Try this recipe, where eggplant and bitter gourd is fried and then added to a cooling yoghurt curry. It’s fantastic on your tastebuds. Will have even the haters, singing you praise. Pachadi is a cooling preparation of vegetables in yoghurt sauce. Sometimes finely ground coconut is also incorporated. You will need a good quantity of thick yoghurt and using two types of yoghurt gives the best results. I use thick set / greek style yoghurt with a little Indian Sour Thick set yoghurt.

How to make Special Pachadi – Recipe at a glance:
- Marinate.
- Fry.
- Prepare ground coconut paste.
- Prepare yoghurt sauce.
- Add fried ingredients into the sauce. Rest and serve.
Ingredients:
- 5 smaller sized bitter gourds or equal amount of other sizes bitter gourd. Should have a plateful of bitter gourd slices.
- 5-6 smaller sized purple coloured eggplants
- 1/4 tsp turmeric powder
- 1/4 tsp salt
- Oil for deep frying in a small wok
- 3 large cloves of Garlic
- 1/2 cup grated coconut, firmly packed.
- Natural Thick set / Greek-style Yoghurt – 1 cup plus 2 -5 heaped Tbsp
- Natural Thick Set Sour yoghurt (Homestyle, Indian yoghurt is ideal) – 1/4 cup (may use sour cream instead)
- More yoghurt as needed.
Tempering:
- 1 Tbsp sunflower oil
- 1/2 tsp mustard seeds
- 3-4 dried red chillies, broken
- 2 sprigs fresh curry leaves.
Two types of yoghurt are used for this recipe to get the yummiest taste. They are thick-set yoghurt / greek style yoghurt and Thick Set Indian Yoghurt which is sourer. You can use sour cream if you don’t have the sour type.
