Instant Cheese Sauce for Cheese Fries

Fun, Yummy, Instant and Quick Cheese sauce to make Cheese fries at home.

Ingredients:

French fries, shoestring thin frozen fries - either bake or deep fry. A plate size serving
Mayonaise, salt and scallion/spring onion greens to garnish As needed
Cheese slices (use your favourite brand/natural cheese slice- that tastes good to you. OR you can use the same amount 3 ¼  Tbsp of Freshly Grated  cheddar or Mozzarella cheese) 2
Butter ¾ Tbsp
Plain flour ¾ tsp
Skim milk ¼ cup skim milk plus 1 tbsp
Mild chilli powder or Paprika ½ tsp
Tomato Ketchup ¼ tsp (or one squirt)
Mustard (mild American) 1/8 tsp




Method:

  1. Start preparing your fries as desired while you set up your cheese sauce ingredients.
  2. In a small non-stick pan, heat the butter till just melted.
  3. On low-medium heat: Add the flour and stir with a wooden spoon till you get a smooth consistency.
  4. Add the milk in a steady stream, stirring the mixture till smooth without any chunks of flour.(This is the ‘roux’)
  5. Once the sauce is thickened and smooth, add the cheese slices and stir till the cheese melts.
  6. Add the chilli powder into your sauce and stir till you get a nice creamy sauce.
  7. Add the single squirt of ketchup and 1  tbsp milk or so to loosen the sauce up a bit.
  8. Scoop the sauce into a squirt bottle or a food-safe zipper bag. Cut a small hole at the corner with sharp scissors at an angle.
  9. Squeeze desired amount of sauce over your plated, salted fries.
  10. Repeat this with the mayonnaise.
  11. Sprinkle over the sliced spring onion ringlets.
  12. Serve hot! Enjoy!

Notes:

  • I usually only make just enough sauce for the required serving at a time as the sauce will thicken up after a while. You can warm up the sauce with a tiny amount of butter and milk if you want a wetter consistency.
  • Add a little butter at the end to prevent the cheese from hardening after cooling.
  • Video is based on this recipe. Slight changes may apply.
