Easy Egg Fried Rice

The easiest, quickest fried rice recipe- for beginners!

I use green peas but this can be replaced with any veg you like. Keep it minimal.

EASY EGG FRIED RICE copy 2 1 Easy Egg Fried Rice

Ingredients:

Rice 2 cups
Eggs, beaten 3
Scallions/spring onions (white part + green part for garnish) 2 shoots
Onion, finely chopped 1 large
Garlic, minced 5 cloves
Oil, divided (Peanut oil or Sunflower oil) 4 Tbsp
Light Soy Sauce 2-3 Tbsp
Salt To taste (up to 1 tsp )
Green peas (from a can or frozen) ½ cup
Pepper powder (White or Black) To taste

Method:

  1. Cook the rice in 3 ¼ cup water. (I use Basmati or Thai Fragrant Rice). Once cooked, fluff up with a fork. Lay the rice, scattered on a tray, and place in the freezer to cool quickly (5-10 minutes). You can also place it under a ceiling fan.
  2. Beat the eggs with a large pinch of salt and pepper. Set aside.
  3. Heat oil(3Tbsp) in a wok till smoking.
  4. Saute the garlic and onion and scallion tops(whites).
  5. Do not allow to brown. Keep tossing till softened.
  6. Without reducing the heat: add the fluffed up rice, soy sauce and toss continuously till you separate all the grains and coat them with the oil. Add salt only if needed.
  7. Add the scallion greens and drained peas. Toss again.
  8. Move the rice to the sides of the wok.
  9. Heat a little amount of oil in the center. Quickly add the eggs to the center. Allow to start setting; then scramble away in the center of the rice till soft set. Mix in the rice from all sides and toss well.  Turn off heat.
  10. Sprinkle pepper and cover the wok till serving.
  11. Serve hot/warm.

Notes:

  • Day-old rice is ideal for making fried rice.
  • Peas may be substituted with carrots, corn or mixed veg.
  • Peas from a can – drain well, or thawed frozen peas may be used. I prefer canned because frozen green peas tend to be too sweet. If using dried green peas, they must be soaked overnight and cooked before cooking fried rice.
