Potato Curry for Chapathi. Simple Recipe

This is the most simple recipe for Potato Curry that goes really well with Chapathi, Roti etc…  I dedicate this simple recipe to Sheeja. Sheeja was my helper and Zaira’s nanny back in 2007-2009 when Zaira was in playschool.  We needed someone to look after Zaira when my husband and myself were at work. I did not place much importance on cooking, since I wanted her to focus on looking after Zaira. We would have a simple breakfast. She could make whatever she liked for lunch, and feed Zaira as well. When we came home, usually after 7:00 pm, she would have our dinner ready. Her dishes were very basic and simple. I always looked forward to the days she made Chapathi and this ever so simple potato curry to go with it.

It’s a comforting type of combination after a long day’s work. With hot,  Chapathi with little ghee added over while they are still hot.. this is still my go-to recipe when I need something quick for Chapathi. You can have just chapathi and this curry or add it as a side with chapathi and chicken/prawn fry.

When I had to take maternity leave, pregnant with Naureen. I went back to India for six months. Sheeja had to be transferred to another family during that time. She visited me once after I had Naureen and was back in Singapore. Zaira was so happy to see her. She told me Naureen looked just like Zaira. I asked her to visit when she had time.

Unfortunately, we received the most shocking news a few months later. That Sheeja … had passed away at her new employer’s home. She was under medication since childhood for Asthma and her health had deteriorated recently.

I will always remember her as the young girl who helped me with Zaira when she was very young. We have lots of memories of her, like how she would always call watermelon – ‘water lemon’, how she hated okra, calling it slimy, how she taught Zaira the months of the year…

And we always mention her when I make this curry for dinner. It is called Sheeja Chechi’s Curry, as Zaira called her Sheeja chechi (sister). God bless her soul.

How to make Potato Curry for Chapathi. Simple Recipe- Recipe at a glance:

  • Chop potato, onion, carrot, chilli.
  • Add to a small saucepan and cook.
  • Season and add spice powders.
  • Once cooked add thick coconut cream. Stir. Done!

Ingredients:

  • 2 Large USA Potatoes or 4 smaller sized
  • 1 medium-sized Carrot
  • 1 red onion
  • 4 large cloves garlic
  • Salt to taste
  • 2 tsp coriander powder
  • 1 tsp mild chilli powder
  • 1/2 tsp plus a sprinkling at the end –  Garam masala ( Kerala Garam masala is the best for this recipe)
  • 1/4 tsp turmeric powder
  • 1/4 tsp fennel powder
  • 1 small mini pepper / 1 -t Tbsp sliced pepper (any fragrant peppers will do)
  • 5-6 fresh curry leaves
  • 1/4 cup Coconut cream

Notes:

  • The Garam Masala used will greatly impact the flavour of the curry. I always use my Kerala Garam Masala. Sheeja always used this too 🙂
