Kale Thoran | How to cook Kale and make it Yummy!
Are you still someone who has not included Kale into your diet? If you are not having fun including Kale, into your salads, you might want to try cooking with it. It’s delicious!
Kale is King

Kale Thoran
Thoran is a typical way of cooking vegetables in Kerala. You add grated coconut and some basic spices and ingredients and toss the finely chopped or grated vegetables with the coconut. This keeps most of the nutritional value of the vegetable intact and is very pleasing with rice. I stock Kale in the fridge every week, and add it to rice, pasta, soups salads very often. This time, I though I would try it as a thoran. We make Spinach thoran and I basically made it just like that. But the results were far superior.
Kale and Coconut
Kale has a slightly bitter taste.. Not a strong one, and I hardly notice it, but if you find the bitter taste bothersome, massaging it after chopping and rinsing after chopped, helps to soften and remove some of the bitter. Another way is to pair the Kale with something sweet. So here, we use coconut and coconut oil as well as shallots. The sweetness of the coconut and the bitterness of the kale, complement each other, proudly to make it a really tasty side dish. It’s great served with rice.
If you would rather, have this as a cold salad, cook it as in the instructions but then allow it to cool adding, chopped apple, walnuts and dried fruit like cranberries!

Ingredients:
- 100 gms Big Batch of Kale (I use curly kale)
- 8-10 shallots, sliced
- 1/4 tsp mustard seeds
- 2-3 Tbsp coconut oil or more as needed
- 1/4 tsp turmeric powder
- 1/4 tsp garlic powder
- 1 1/2 cup grated coconut
- Salt to taste
