Egg Omelette Curry is a different and very easy way to make an Egg curry, perfect for breakfast. This goes great with most Breakfast staples like Idiyappam, Puttu. Here, I have served it with Mani Puttu and it was a great combo! Do try!

How to make Egg Omelette Curry – A simple breakfast curry – Recipe at a glance:
- Prepare omelettes, adding, onion, chilli and curry leaves.
- Roll the omelettes and cut them into slices.
- Prepare a simple curry with spices and coconut milk and add the omelette rolls to it. Cook till the curry thickens.

For the Omelette:
- 6 eggs
- 1 red onion, chopped (1/2-3/4 cup)
- 5 small hot green chillies, sliced
- 8-10 curry leaves, finely chopped
- Salt to taste
- Coconut oil for frying (2-3 Tbsp)
For curry:
- 2 Tbsp Coconut oil
- 1/4 tsp Mustard seeds
- 1 Red onion, sliced
- 1 1/2 tsp Ginger, minced
- 1 sprig Curry leaves
- 5 tsp Coriander powder
- 1 tsp Kashmiri chilli powder
- 1/8 tsp(1 large pinch ) Garam Masala
- 1 1/2 – 2 cups thin Coconut milk (2nd press/dilute)
- 1/2 – 1 cup thick Coconut milk(1st press/concentrated)
- Fresh coriander leaves, chopped for garnish
- Salt to taste
