Points to remember when making stir-fry Chinese Vegetables:

  • Use a Chinese Wok for best results. The centralized heat at the bottom of the wok is ideal for stir-frying because it helps to sear the stir-fry ingredients quickly. When you use a wok, you can push any ingredients that need to be on a lower heat- up the sides of the wok.
  • Do not overload the wok, or use a wok of appropriate size, depending on the amount of veggies you are cooking.
  • Cut vegetables to uniform sizes.
  • Add oil to the wok, only once it is hot.
  • Add ‘flavoring ingredients’ like ginger, garlic, Chillies, and Shallots first into the oil.
  • Stir frequently.
  • Do not cook any vegetables for too long.
  • Some vegetables are better blanched before the quick stir fry process.
  • If cooking mixed vegetables, add the vegetables that take longer to cook into the wok first.
  • Prep all ingredients and place them near the stove, before you start cooking.
