Chinese Green Chilli Egg
This simple but fancy stir-fried egg with green chilli has its origin in Chinese (Hunan) cuisine. I had it in Chinatown in Singapore and fell in love with the flavorful egg dish. It is made with mild green chillies so don’t worry about it being too spicy. However, if you like spicier food, you can just use a spicier variety of green chilli. Hunan cuisine often uses fermented black beans(Douchi) in stir-fries. You can use either use bottled fermented black beans or even use Black Bean Garlic Sauce instead. The green chillies used are a milder green chilli known as Horn Peppers or Screw Peppers. They are like a cross between mild green chillies and bell peppers in aroma and flavour.

How to make Chinese Green Chilli Egg – Recipe at a glance:
- Make an instant red chilli sauce.
- Beat eggs with seasoning chopped green chillies, and garlic.
- Scramble/Fry the eggs lightly.
- Saute the garlic with the chilli sauce, green chilli and black bean. Return the eggs ad toss.
- Garnish and serve.

- 5 eggs
- Soup seasoning powder or Salt and White pepper, to taste (for eggs)
- 2 large horn pepper/Screw peppers (makes 1 1/2 cups, when chopped)
- 1 long mild red chilli pepper
- 2 cloves plus 2 tsp Garlic, minced
- 1 small piece ginger (1/2 to 3/4 tsp)
- 1 Tbsp Rice Vinegar
- 1/4 tsp Salt
- 1/2- 3/4 tsp Sugar
- 1 tsp Fermented Black Bean or Black Bean Garlic Sauce
- 2-3 Tbsp oil
- A dash of Asian Sesame Oil, divided
- 2 Tbsp Spring Onion greens, for garnish
