Zaira’s Chocolate Cake | Classic Chocolate

Zaira, my eldest, turned 16 on the 13th of March, 2020.  Sweet sixteen. My baby girl has always been a sweet soul. She is kind, and always giving us such immense joy, since the day she was born. I used to pray before I had children, to god, to grant me a sweet and dear child for me to love and take care of. This prayer was answered 10 fold!

She really is my sunshine. She is the best big sister too :).

So every year, Zaira always hints to me ahead of her birthday, that I should make her favourite chocolate cake. I make a few types and I like to experiment, but this is hands down, her favourite Rich, Classic Chocolate cake.

This is a Chocolate cake made using Baking chocolate  (unsweetened), instead of cocoa powder. Not a light sponge, but a pound-cake like ‘old fashioned’ chocolate cake.

This cake is frosted with a simple whipped cream topping. Although the cake may be sliced into two layers and filled with cream as well, I prefer just one solid cake and whipped topping over it. The light whipped topping, incorporates a small amount of homemade caramel sauce ‘Dulce de leche’.    

The caramel is not prominent, yet it really works with the rich chocolate cake. We all enjoyed Zaira’s chocolate cake, and I hope you will too.

How to make Zaira’s Chocolate Cake | Classic Chocolate – Recipe at a glance:

  • Melt the baking chocolate.
  • Preheat oven.
  • Separate the eggs.
  • Measure out ingredients.
  • Prepare cake pan.
  • Beat egg whites.
  • Beat butter, sugar, vanilla, melted chocolate. Then add in flour and milk.
  • Add batter to the prepared cake pan and bake 45 – 50 minutes.
  • Cool off completely.
  • Prepare whipped cream topping and do simple decorating.
  • Chill well before served.

Ingredients:

  • 6 eggs, at room temperature.
  • 4 oz Hershey’s Unsweetened Baking Chocolate bar or another reliable brand
  • 1-2 oz or spoons of Hershey’s semi-sweet chocolate chips
  • 1/2 cup water
  • 3/4 cup butter, softened – I used salted butter.
  • 1 1/2 cups fine caster sugar
  • 1 1/2 tsp pure Vanilla extract
  • 3/4 cup milk
  • 2 2/3 cup all-purpose unbleached flour
  • 3 tsp baking powder
  • 3/4 tsp salt
  • 1 bar, Hershey’s dark chocolate or milk chocolate, for decorating.

For whipped cream caramel topping:

  • 400 MLS chilled cream/ whipping cream
  • 3 Tbsp icing sugar
  • Pinch of Vanillin Powder
  • 1 Tbsp Dulce de Leche
