West Lake Beef Soup
West Lake Beef Soup/Broth – 西湖牛肉羹 (Xīhú niúròu gēng) is a simple-to-prepare Soup, made in the Chinese Zhejiang Cuisine style.
West Lake Beef Soup is a rich, mellow, fresh, and smooth-tasting soup and has an attractive, and unique appearance. It is usually served as an appetizer before the main meal.
Its appearance is likened to the waters from the famous ‘West Lake’ located in Zhejiang, due to the added cornstarch slurry, and greens – and hence its name.
Zhejiang is an eastern, coastal province in China, located south of Shanghai. Zhejiang cuisine, also known as Zhe cuisine, is one of the Eight Culinary Traditions of Chinese cuisine. In general, Zhejiang cuisine is grease-free and fresh-tasting, highlighting soft flavors with a mellow fragrance.
I love how simple it is to make this West Lake Beef Soup, with its appealing fragrance from plenty of freshly chopped greens.

How to make West Lake Beef Soup – Recipe at a glance:
- Marinate the minced beef and refrigerate for a couple of hours.
- Add to a simple stock made from fresh ingredients and stock cube or freshly made stock.
- Season and add fresh herbs.

Ingredients:
- 300 gms minced Beef
- 2 Beef stock/bouillion cubes
- 1 knob of ginger, cut into thin slices
- 2 Egg whites
- 3-4 Tbsp Cornflour (to be mixed with 5 Tbsp water to make a slurry)
- Any soup seasoning of choice
- 1-2 Tbsp Chinese rice wine (optional) or non-alcoholic meat marinade – see notes
- 2 Lime leaves
- 1/2 tsp White pepper to taste
- Large handful of finely chopped fresh Coriander
- Large handful of finely chopped fresh Spring Onion Greens
To Marinate the beef:
- 1/2 tsp Sesame oil
- 1/2 tsp Corn flour
- 1/2 tsp finely minced or ground ginger
- 1/2 tsp finely minced or ground garlic
- 1/4 tsp White pepper powder
- 1/4 tsp Salt
- 3 Tbsp water
