Vegan Mac and Cheese

This vegan-friendly version of Macaroni and Cheese uses silky coconut cream, combined with a simple mix of spices, condiments, and herbs as well as nutritional yeast. In this way, we can completely eliminate the need for cheese and butter(dairy products). So it is great for those who have trouble with dairy products too. Also good for those on plant-based or oil-free cooking.

MAC AND CHEESE WITH COCONUT MILK OR COCONUT CREAM?

Coconut Cream is the perfect option for those looking for the richest creamiest Vegan version of Mac and Cheese. Look for Coconut cream or milk that is not sweetened and has the most natural flavor. It’s also the quickest mac and cheese you could prepare!! I will always recommend Kara coconut products. I have been using it for over 20 years!

NUTRITIONAL YEAST

Nutritional yeast is a deactivated yeast, often a strain of Saccharomyces cerevisiae, available commercially as a food product. It can be found as flakes, powder, or granules in the health food sections of most supermarkets. Since it is deactivated, it has no leavening power ( for baking bread, etc…). It is mainly added as a type of flavoring or seasoning.

Nutritional yeast is often used in Vegan recipes, where cheese is used. It may not taste exactly like cheese but it brings about a cheesy ‘feel and flavor’ to the dish. Nutritional yeast has a savory, nutty, and umami flavor when added to cooked food.

LIQUID SMOKE

Liquid smoke is a natural flavoring agent, made from condensing the smoke from burning wood. It comes in bottles and the flavor will change depending on the type of wood (mesquite, hickory etc). Only a few drops are required to transform some dishes to get a wood fire cooked, smoky aroma and flavor. It is an optional ingredient in Vegan Mac and Cheese.

TURMERIC

To get the popular yellow color of Mac and Cheese, a dash of turmeric powder is popularly used instead of harmful yellow coloring. However, don’t add too much as turmeric flavor can be very strong if you add too much. We find omitting it, is better if you don’t mind the lighter color.

VERSATILE QUICK VEGAN MAC AND CHEESE 

Okay, so this recipe can be adjusted to one’s taste. You can try different herbs and spices, you can add veggies and make it yours!

How to make Creamy Coconut Mac and Cheese (Vegan)  – Recipe at a glance:

  • Cook the pasta according to package directions and get started on the sauce in another saucepan.
  • Just add all ingredients for the sauce and simmer till cooked and thickened. Then dilute with enough liquid as needed.
  • Toss the drained pasta in the sauce and enjoy!

  • 2 1/2 cups Elbow Macaroni, or similar pasta
  • 200 ml Kara Coconut Cream, at room
  • 1/4 cup Nutritional Yeast
  • 2 Tbsp Tapioca flour
  • 1 Tbsp Corn flour
  • 1/2 tsp Paprika
  • 1/4 tsp Garlic powder
  • 1/4 tsp Onion powder
  • 1/4 tsp White pepper powder
  • 1/2 tsp mild American Mustard
  • 1/2 tsp Light Soy sauce
  • 1 Bay leaf
  • 1/2 tsp dried Chives
  • 1/2 tsp freshly squeezed Lemon
  • Few drops of Liquid Smoke (optional)
  • Salt as needed
