Unakkalari Payasam / Ari Payasam / Kerala Coconut Milk Kheer

One of the simplest of Kerala Payasams. Unakkalari Payasam or Ari Payasam is a very integral part of any Kerala Sadhya. It is very simple to prepare. Unakkalari – is raw rice with the bran intact. Ari means Rice. Payasam refers to Kerala Kheer. This rice can be made into payasam using cows milk. It is known either as Ari Payasam, Paal Payasam or Ney(Ghee) Payasam. A popular payasam using this rice is Ambalapuzha Paal Payasam, famous for its light pink hue.

Here, however, we don’t use cows milk. We use Freshly pressed coconut milk. So, you can convert this recipe into a Vegan Kheer Recipe by using Non- Dairy butter in place of the ghee.

This Payasam is very tasty, with the addition of golden fried coconut bits and cashew nuts.

How to make Unakkalari Payasam / Ari Payasam / Kerala Coconut Milk Kheer – Recipe at a glance:

  • Make Sarkara Pani ( Sugar Syrup from Jaggery)
  • Squeeze three separate extractions from grated coconut.
  • Light fry the rinsed and drained rice. Pressure cook till softened.
  • Add the different extractions of coconut milk along with syrup at each stage. Also, add spices\
  • Fry coconut slivers and cashew nuts till golden and add to the cooked payasam.

Ingredients:

  • 1 cup Unakkalari (Kerala Payasam Rice with Bran) 1 cup =240 ml measure
  • 350 gms Jaggery/ Sarkara / Gur (Unrefined Sugar /Non-centrifugal cane sugar)
  • 350 -400 gms Grated coconut
  • 1 1/2 tsp fine Cumin powder
  • 1/4 tsp fine green Cardamom powder
  • Pinch of Salt
  • 1/3 cup small fresh coconut slivers ( chopped bits of fresh coconut, not grated)
  • 1/4 cup cashew nuts
  • 2 plus 2 Tbsp ghee
