Umma’s Pulivaral – Pulivaral is a simple and really old traditional Malabar snack. In the olden days, these were always made during Ramadan.
The name comes from the fact that they are shaped similar to the raw tamarind pod. My mom shares fond memories of how these were made daily at her home during Ramadan in the early hours of the morning.
Soft, hot fritters made with sweet banana in a muffin-like batter. The flours used are fine-textured whole wheat flour and rice flour.
My grandmother was an expert and squeezed the batter through her hands to make the tamarind pod-shaped fritters. My mom used to watch in wonder how fast they would fall into the hot oil.
I make these at my home, but in an easier small dumpling shape, just by dropping spoonfuls of batter into the oil.
Although the traditional name for these is ‘Pulivaral’, at my place we call the ‘Unniyappam’ which is an altogether different snack item. I guess it’s because the ball shape fritters look similar to the ‘Uniyappam’
My mom always whips them up so fast whenever we feel like having some sweet hot fritters for tea time. Everyone loves them.. it’s one of my moms signature snacks. A super recipe, for when guests turn up at tea time.
