Ulli Theeyal – Shallots in Roasted Coconut Curry
What is a Theeyal?
Theeyal is a dish, mostly vegetarian, where spices and grated coconut are roasted together, till golden brown and then ground to a fine paste. There are several varieties and methods. Here, I am sharing an extremely simple but yummy Ulli Theeyal or Shallot Theeyal made with shallots in roasted coconut curry. If you love whole shallots in a curry, you will love this Theeyal.

How to make Ulli Theeyal – Shallots in Roasted Coconut Curry – Recipe at a glance:
- Peel the shallots.
- Soak tamarind
- Roast coconut with cumin and fenugreek till brownish-red and grind that to a paste.
- Saute the green chilli, shallots, ginger, garlic, and tomato, adding spices and coconut paste in sequence.
- Temper with mustard seeds, dry chilli, and curry leaves. Add to the curry.

Ingredients:
- 1 cup of peeled Shallots
- 1 1/2 cup grated fresh coconut
- 1 lime sized ball of Tamarind pulp
- 1/8 tsp Fenugreek seeds
- 1/8 tsp Cumin seeds
- 3 Tbsp plus 1 Tbsp Coconut oil
- 2-3 Small hot green chillies, chopped into thin rings
- 3 large cloves of garlic
- 1 small piece of ginger (a little less than the garlic)
- 1 firm and ripe Tomato, finely chopped
- 1 tsp Chilli powder
- 1 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 1/4 tsp Mustard seeds
- 2 dried Red chillies, broken
- 1 sprig of fresh curry leaves
- Salt, to taste
Key Ingredients: Shallots, Coconut, Garlic, Ginger, Green chilli,Tomato, Tamarind, Curry leaves, Spices, Coconut oil, Salt.
