Tuna Noodle Casserole is a dish that brings very strong nostalgic vibes for many! So many of us grew up eating this, and it was a dish that was in constant rotation for many a household.
Recipes involving baking flaked fish (like Cod) with white sauce can be traced back to the 1800s. There is an old Portuguese dish made with flaked cod, potato, bechamel sauce, and breadcrumbs. The Tuna Casserole was created and made so popular by the Campbell Soup Company. In times, when canned food like Tuna and Campbells Soup was always a Pantry staple, this dish proved to be – Quick – Easy – Cheap, and Satisfying!
Working moms could come home and throw it all together and pop it in the oven and have a bath by the time a hot bubbly meal was ready! The truth of the matter is the recipe stuck with so many people, not only because it was s easy, but because they actually liked it!
The recipe can be altered, making homemade Bechamel Sauce ( as in this Pastitsio recipe ), but using the Canned Soup is what makes it so hassle-free and creamy! You really can use cream of chicken or cream of mushroom, although the latter is more popular! The crust can be made with cracker crumbs, breadcrumbs or my favorite – Crushed Potato chips and Cheese.

Ingredients:
- 375 gms of Egg Noodles or Pasta of Choice (I like to use colorful pasta spirals)
- 2 cans of Tuna (Flakes in oil or water, but drain and press the tuna well to remove the water/oil completely. This is to prevent the fishy taste from overtaking your casserole dish)
- 1/4 cup Yellow Onion (Vidalia), chopped
- 2 cans Cream of Mushroom or Cream of Chicken Soup
- 1/2 cup Canned Mushrooms, sliced
- 2 cups, shredded cheese, divided (Use Mild cheddar or a combination of Mozzarella Cheddar and Parmesan)
- 1/2-1 cup Green Peas, thawed
- 2-3 Tbsp finely chopped fresh Parsely
- 2-3 cups of crushed plain potato chips
- Freshly cracked pepper to taste, salt as needed
