Tortilla Wraps with Tuna , Egg , Avocado & Sweet Corn
Instead of the regular old Tuna Sandwich, my girls decided to make wraps today. Quick and easy Tortilla Wraps with Tuna , Boiled Egg, Mashed Avocado and Sweet Corn
Tortilla Wraps with Tuna , Egg , Avocado & Sweet Corn

Ingredients:
- 4 tortilla wraps, softened
- 1 flaked tin tuna in water, drained
- 4 eggs, boiled
- ¹⁄3 cup mayonnaise
- 1 ripe avocado
- ¼ cup frozen thawed sweet corn
- 1 shallot, minced or crushed finely
- salt and pepper to taste
- ¼ cup pea spouts or mustard cress
Method:
- Peel the boiled eggs and dice
- Remove the avocado flesh.
- Add the tuna and avocado to a bowl.
- Mince the shallot using a pestle and mortar and add to the bowl.
- Add mayonnaise and work into the mixture well. Mash the avocado into the tuna mixture with a fork.
- Add the lime juice, salt and pepper to taste. Mix.
- Add the diced egg and sweet corn and stir into the mixture. Add extra mayonnaise if you would like a creamier texture. You could mix mayonnaise with yoghurt as well.
- Heat the Tortillas gently on a grill pan.
- Add filling to the centre and spread the green sprouts evenly. Wrap and Serve.

Notes:
- If you would like to replace the Mayonnaise in the recipe, try the following. Mix 1/3 cup yoghurt with 1 tsp olive oil, 1/2 tsp white vinegar, 1/2 tsp dijon mustard or plain mustard, salt and pepper to taste. You would also add finely chopped parsley or cilantro.
