Tofu Scramble on Toast (Vegan breakfast)

This tofu scramble is fast, flavorful, and a wonderful egg-free savory breakfast. Made with garlic spinach, vegetables, and some spice, this is a version that I like to whip up on late Sunday mornings. I first had this for breakfast when we were traveling through Bali. I found it really appetising and it kept and energetic and full till lunchtime.

Tofu is an excellent vegan protein source, so it’s a good option to incorporate into your weekly meal plan. The type of tofu you use makes in difference in the type of tofu scramble you end up making. I prefer extra firm tofu or beancurd(Taukwa) because it holds up better in the frying process.

Some texture is important when trying to make firm scrambled eggs. Use silken or soft tofu only if you are trying to make soft velvety-style scrambled eggs. For this stir-fry type of recipe, however, I strongly recommend the pressed-firm tofu or beancurd(tau kwa).

How to make Tofu Scramble on Toast (Vegan breakfast – Recipe at a glance:

  • Stir fry the tofu with added spices.
  • Add a mixture of vegetables and cook.
  • Stir everything together and mash /scramble to desired texture.
  • Season and Garnish.
  • Serve over toast wth grilled veggies and avocado.

Ingredients:

  • 600 gms Extra firm pressed Tofu or Beancurd (tau kwa)
  • 4 Tbsp Sunflower oil
  • 1 1/2 tsp Mild Chili powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Ground Cumin
  • 1/8 tsp Turmeric powder
  • Salt to taste(1/4 tsp)
  • 2 tsp finely minced Garlic
  • 1 carrot, julienned/grated
  • 1/2 cup frozen Corn kernels (thawed)
  • 1 small Tomato, diced
  • 1/2 – 3/4 cup baby spinach leaves
  • Light soy and seasoning to taste
  • 2 Tbsp fresh cilantro or spring onion greens (for garnish)
