Thalassery Chicken Biryani ( with Marinated Chicken ) – Another take on a popular recipe from my website. My original recipe for Thalassery Chicken Biryani has had so many testimonials from my readers and youtube followers.

It is one of the big traffic sources for my blog and youtube channels. I take pride in the recipe, as it a complete original with my homemade spice mix and method. My regular readers, know how devastated I was when all the copies turned up on the web. Facebook pages,  reuploading my Video both the English and Malayalam versions. Youtube channels, totally using my recipe and mix step by step… I have come to peace with it all. A good recipe will be used and yes, sometimes copied… We all look for inspiration from some place or the other. Sure it would be nice for some acknowledgment, but in the Blogosphere, sometimes we lose that sense of ethics since not everyone bothers to hound you out on it. I do not want to sound like I am blowing my own trumpet in any way, but here is the only place, I can possibly let off any steam regarding the matter… I hope my readers will understand. LOTS OF LOVE! I am happy that so many have tried and loved the recipe and made it a regular in their homes. If you even think of me once, when you have a happy Sunday Meal with your family, I am blessed. Thank you! Those of you who know me, know that I am constantly playing with spices and spice mixes.. and I love inventing new recipes especially for rice. I make Biryani very often and play with my magic spices all the time. It is immensely gratifying for me when I discover a new flavor combination.

This New, Original Recipe for Thalassery Chicken Biryani,

gives you an authentic taste of the Popular Malabar Dish, with a change.. Authentically, raw chicken is added and cooked with the Masala. That is the Purists method. However, many prefer to marinate the chicken, since they find it lacking some depth of flavor in the chicken itself. Here is another spice combination for the Thalassery Biryani mix that goes directly into the marinade and gives delicious results! I hope you will try and give me feedback on this one as well. Thalaserry, a Coastal Town in the Malabar Region of Kerala is home to the origination of many a mouth-watering delicacy. The people love their food and love to serve even more.  Thalassery Biriyani is one of my favorites. Key to a Thalassery Biryani is the rice used – ‘Kaima‘. The scent offered by this variety of rice might be one of the key factors. When I can’t find ‘Kaima’ Rice also known as ‘Jeerakasala’ Rice, however, good quality basmati can be used instead. Unlike some Biriyani Rice preparations, the rice for Thalassery Biriyani is not cooked in excessive water and drained when 75 % cooked. It is cooked with ghee and spices with a specific amount of water till it is cooked but not overcooked. Then this rice is layered in the’DUM’ – Sealed method of cooking that allows no steam to escape during the cooking process. Green Chillies is also an essential ingredient to this Biriyani. However, the number of green chillies can be reduced to suit your taste. Try out different varieties of green chillies to give the dish some notable difference each time. Another key ingredient is the fried crispy onions, that are crushed and added to the chicken masala. This is known as ‘Bista’ and the flavors permeate throughout the dish – such a pleasing taste.
