Here is my original recipe. The recipe is for one kg to one and a half kg chicken -biryani. Simply double, to store more of the powder. It should be used within a month.
Ingredients:
3 Cloves
3 Green cardamom
1 tsp Fennel seeds
1 tsp black peppercorns
1/4 tsp cumin seeds
1/4 tsp shahi jeera
1/4 tsp nutmeg
1/4 tsp mace
2 small sticks of cinnamon
Heat the above spices in a dry pan, till you start to smell the toasted spices. Then add the following:
1 tsp kasakasa(white poppy seeds)
2 dried red chillies
1 petal of star anise
Stir briefly till everything heats through, then remove from heat.
Grind to a fine powder and allow to cool before storing in a small airtight bottle.
