Sweet and Spicy Pineapple Pickle

This sweet and spicy Pineapple Pickle is a Kerala Speciality.  It is spicy, tangy and savory. This version is not the jammy thick type, but more typical Kerala Pickle style. Use very sweet and ripe Pineapples for best flavor and texture.

How to Choose a good ripe Pineapple:

  • Look for pineapples with a more vibrant color body and leaves. The leaves should look fresh for the best pineapples.
  • Now look for pineapples that are a mix of yellow and green colors. Usually more yellow towards the base.
  • Next, make sure the pineapple feels heavy for its size and not too light or it may not be a juicy good one.
  • Now it’s time to smell. Smell the base of the pineapple. Ripe sweet pineapples will have a nice sweet pineapple scent. If they have little to no scent they are likely not properly ripened.
  • Try pulling one of the larger leaves of the pineapple (Fronds). The frond of Ripe pineapples will come out easily, whereas the large leaves of unripe pineapples will not be removed as easily.
  • These are the main hints to buy perfectly sweet pineapples. Having said that, I have always mostly relied on that perfect fresh and sweet pineapple scent to help guide me towards making the right purchase. Has always worked.

  • Chop Pineapple. Peel garlic. Chop chillies.
  • Saute spice, garlic and chilies in oil.
  • Add vinegar and thicken the mixture.
  • Add the chopped pineapple. Season. Cook briefly.
  • Cool. Store in glass jars.

Ingredients:

  • 1 1/2 cups chopped ripe-sweet pineapple
  • 4 generous Tbsp ‘small garlic cloves’  – Indian Variety (see notes)
  • Green chilli to taste (I have used 4 small hot chillies chopped in half)
  • 3 Tbsp coconut oil or gingelly oil
  • 1/2 tsp fenugreek seeds
  • 1 1/2 Tbsp Kashmiri chilli powder
  • 1 1/2 tsp Asafoetida
  • 3/4 -1 cup white vinegar (increase or decrease if you have more or less pineapple)
  • Salt to taste (1 tsp)
  • 1 tsp yellow mustard seeds (see notes)
