Spicy Al Faham Chicken – for the love of a good Bbq

Al Faham is the name given to a type of bbq, popular in the Middle East. Usually, chicken is flattened to tenderize – it can be boneless with simple pantry ingredients as my recipe here.

However, bone-in bbq is pretty awesome with this recipe too. My Spicy Al Faham  D’jaj ( Chicken ) is a spin on the more common recipe out there which incorporates green chilies and fresh coriander into the marinade.

As with many Arabian recipes, this one too has found its place in the popular food trends in India, especially in Kochi, where I visit every year.

I found that every place I visited had a different tasting Al faham.. My niece took me to an eatery that she was raving about and we had a very yummy version there. And of course, I had to replicate the flavors I discovered that day in my own kitchen.

Here it is and yes, it was spot on and so delicious! I also include the recipe for the easy – instant garlic sauce here. Oh and although, it’s called ‘ Spicy Al Faham Chicken’ , it is not the burning heat kind of spice. You can increase or decrease that by adjusting the chili powder and chili flakes in the recipe.

Spicy Al Faham Chicken

Recipe at a glance:

    • Chicken is pricked and flattened for tenderizing.
    • The pieces are marinated in in 2 phases. This helps boost flavor.
    • Marinated chicken is left overnight in the fridge for best results.
    • The chicken is grilled over charcoal bbq till done.
    • Served with Pita bread, Salad, Fries, and the Instant Garlic Sauce.

Ingredients:

  • 1 1/4 kg  / 2.75 pounds Bone-in Chicken ( either a whole chicken, butterflied OR thigh and leg portions
  • 2 TbspButter, softened

First Marinade:

  • 10 -12 tsp Ginger-Garlic paste
  • 1 – 2 tsp Mild chilli powder ( Kashmiri chilli powder)
  • 2-3 tsp Tomato paste ( concentrate)
  • 1 Tbsp Lime juice, freshly squeezed

Special Spice Blend:

  • 4 green Cardamom pods
  • 1 stick (1 1/2 inch) Cinnamon
  • 5 Cloves
  • 1/2 tsp Black peppercorns
  • 1 tsp Coriander seeds

Second Marinade:

  • 1 1/4 Tbsp Dried fenugreek ( can also use dried mint or dried coriander/ cilantro)
  • 1 cup Thick sour yogurt (or use greek style yogurt)
  • 2 Tbsp Olive oil
  • 1/4 tsp Ground turmeric (powder)
  • 3/4 tsp  Ground cumin ground cumin
  • 1-2 tsp (or more) dried chilli flakes
  • 1  1/4 tsp Salt (or to taste)




Key Ingredients: Bone-in Chicken, Ginger, Garlic, Yoghurt, Lime, Spices, Dried Herbs, Olive oil. Butter, Salt
