The ‘hot’ and ‘cold’ combination of hot grilled chicken with cold delicious potato salad has won everyone over around here. We are all looking for those quick and easy meal plans, aren’t we? Those that are hassle free yet tasty! This fits the bill and is great to pack for a picnic as well.
Chicken tenders / tenderloins are the slender strips of additional meat hanging from the bottom-side of chicken breasts. There would thus be two tenders per bird. They are often sold separately from chicken breasts at the supermarket, often coming in thermo-packs of 5-6 strips. Sometimes labeled as chicken fillet. These cuts of chicken are quite cheap and can be used for frying (chicken strips) or cut up in stir fries or grilled as I have done. Cooked properly they remain moist and tender. This is my favorite quick recipe using chicken tenders.

Ingredients:
- 600 gms boneless chicken tenders ( also known as fillet of chicken)
- 1 large purple onion, sliced thinly
- 4 large cloves garlic, crushed to a paste
- 2 tsp smoked paprika (sweet smoked paprika powder)
- 3 tsp lime juice
- 4 Tbsp olive oil plus extra for grill pan
- ¼ tsp pepper
- ¾ tsp salt
To serve:
- Cold Potato Salad
- Assorted Salad Leaves or Lettuce Leaves
How to prepare Smoky Grilled Chicken Tenders with Potato Salad:
- Rinse and pat dry the chicken tenders. Use a small knife to scrape and cut off the white tendon. Discard this.
- Add the finely sliced onions to a large bowl.
- Add the lemon juice and toss well.
- Allow to sit for 2 minutes, then add all the remaining ingredients, including chicken.
- Toss gently to thoroughly coat the chicken tenders.
- Allow to marinate at room temperature, briefly while you prepare the potato salad.
- Heat a grill pan and pour a thin layer of olive oil over the top.
- When moderately hot, place the tenders on the grill pan with 1/2 an inch between the strips. Grill on medium till the bottom is golden. Repeat on second side. Do not over grill. It should take only 2-3 minutes per side. Keep on medium heat to avoid blackening of the sliced onion.
- Grill the tenders in batches, if needed.
- Remove the grilled chicken to a plate and keep covered with aluminum foil till ready to serve.
- To serve : Place assorted salad leaves or lettuce on side of plate, topped with chilled potato salad. Place Grilled smoky Chicken tenders on centre. Enjoy with some sparkling juice!
