This Simple Potato and Chicken Soup is the quickest simplest and most effective ‘Feel Better’ Soup you can make. It can be made Vegetarian by skipping the chicken entirely or switching it with beancurd cubes.

And the best thing is, this is not just for when you are feeling under the weather, it is a quick-to-make comforting soup, that everyone will enjoy. Kids love it too.

I recently had Covid, for the second time. The last time was a year ago. This time, I was out of action for 3 days straight and for one week, I had absolutely no desire for food. After I recovered, I gradually lost my sense of smell and I have an altered sense of taste at the moment. I hope to recover fully.. soon.

This soup was something that helped me. It energized and comforted me. Not just me, it comforted my family as well – who were also affected.

Potato: Nutritionists have linked potatoes to the release of serotonin in the human brain. (makes us happy). Since potatoes are so high in Vitamin B6 and carbohydrates, they also provide fast energy to the body.So potatoes help to make us happier, and more energized. Potatoes are also packed with minerals like iron, magnesium, potassium, and calcium and surprisingly also a rich source of Vitamin C. Vitamin C helps encourage the production of white blood cells known as lymphocytes and phagocytes, which help protect the body against infection

Chicken: Adding chicken to soup stock is an age-old remedy for fevers and colds. The broth provides hydrating fluid and electrolytes like sodium, potassium, and magnesium. Especially helpful when you have a fever or run the risk of becoming dehydrated. The steam from hot broth also can open up nasal passages to help you breathe easier. Adding chicken provides protein, which also supports the immune system.

Carrots and Onion: These vegetables contain vitamins A and C, and other antioxidants. These nutrients help to build a stronger immune system and fight off viruses. They help to boost recovery. Carrots are a rich source of beta-carotene. Your body converts beta-carotene to vitamin A, which triggers the creation of more white blood cells which help to fight off infection. As an added bonus, vitamin A also helps to maintain healthy mucous membranes that work to trap and fight off germs. Onions are loaded with plant chemicals including flavonoids, which have both an antioxidant and anti-inflammatory effect.

Ginger and Garlic: are extremely beneficial to overall health. Garlic and ginger offer powerful antiviral and antibacterial effects against a variety of pathogens, including the flu and respiratory infections

  • 2 large Potatoes, cut into large cubes
  • 1 large Carrot, diced
  • 1 large Yellow Onion (Vidalia), quartered (large chunks)
  • 3/4 cup boneless chicken, cubes (you may omit this or replace with beancurd cubes or silken tofu- see notes)
  • 4  large cloves Garlic, chopped
  • 2 tsp Ginger, chopped
  • 1 chicken stock or veg stock cube
  • 2-3 Tbsp Spring onion greens, chopped
  • Coarse black pepper to taste
  • 3 Tbsp Oil
  • Salt as needed
