Simple Agar Agar Jelly – Vegan Jelly using Agar Agar Powder
Agar Agar or China Grass is a vegetarian substitute for gelatin. Here, I use agar agar powder to make these Simple Agar Agar Jelly Bites. You can also use the agar agar strips, but it takes soaking and longer time for the strips to dissolve and melt into the solution. The powder is available in the Asian section of your supermarket along with other baking items.
Agar Agar can be flavored with fresh juice or extract as well as milk or coconut milk (making it a vegan recipe) . You can add chopped fruits or basil seeds to the moulds, making them more attractive. Other ingredients like corn kernels are also sometimes used. The jelly can be poured into one large mould or several small ones like I have done. My jellies are simple strawberry flavored and very refreshing!

Simple Agar Agar Jelly – Vegan Jelly using Agar Agar Powder
Ingredients:
- 1 (13 gm) packet agar agar powder (I use Happy Grass Brand)
- 1 L (1000 mls) water
- 170 gms sugar
- 100 mls evaporated milk or coconut milk for vegan option
- 1 tsp strawberry flavor or pure extract, as desired
Method:
- Add the water, sugar and agar agar powder to a large sauce pan. Stir well.
- Stir in the evaporated milk as well.
- Bring to boil on high heat, stirring occasionally. (Careful not to boil over).
- Reduce heat to low and continue to simmer for 5 minutes. Stir occasionally.
- Remove from heat.
- Add in the flavoring of choice.
- While still hot, pour into mould tray. (Refer Video).
- Allow to cool at room temperature for 5 minutes.
- Now place in the fridge till chilled and set, 2 hours or more.
- Gently press against the moulded jelly to release. They pop out easily.
- Serve chilled.

- If you want a softer texture, reduce the amount of water/milk. However, for bite size jellies: the amount specified is best. It results in a nice smooth texture that can be bitten into instead of scooped like a pudding.

can we change the brand or the agar agar?
Yes any brand will work. You can also use agar agar strip ( china grass), but need to grind it coarsely and melt it completely. Agar agar powder, is easier to use.
what kind of agar-agar will we use?
I’m wondering how you call this vegan when there is milk in the recipe? Vegetarian would probably be the better lable.
The Vegan option is by way of substituting the milk(evaporated) with coconut milk. I have updated the post.. Thanks so much.
