Shakshouka with Fava beans (Ful Medames Shakshuka)

Shakshouka is a dish of eggs poached in tomato sauce with olive oil, peppers, onion and garlic, and spices. It is notably a staple food in North Africa.

Ful medames, or simply fuul, on the other hand, is a stew of cooked fava beans served with vegetable oil, cumin, and optionally with chopped parsley, garlic, onion, lemon juice, chilli pepper, and other vegetables, herbs, and spice ingredients. It is notably a staple food in Egypt.

Both are traditional and heartwarming comfort foods. Here, we combine the recipes to make something wonderful It makes a warm, heartwarming breakfast on the cooler days. I add some grated Mozzarella to give it that ‘ooey-gooey’ factor and make it popular with the kids too! Poached eggs, with the yolk still runny, and some stretchy cheese in each bite.. How does that sound to you?

This is a pantry recipe where canned ingredients and ready-to-use spice and peppers are used. You can also use fresh ingredients by cooking the fava beans ahead of time and using very ripe Roma tomatoes.

How to make Shakshouka with Fava beans (Ful Medames Shakshuka) – Recipe at a glance:

  • Saute Onion and Garlic.
  • Add tomato and pre-cooked or canned fava beans and cook down till mashed.
  • Add chipotle pepper and spice.
  • Place cracked eggs into indents in the thickened and seasoned sauce.
  • Cover and cook, adding cheese, just till eggs are soft set. Garnish.
  • Ingredients:

Ingredients: 

  • 1 can (400 gms) Peeled Tomatoes (Pelati) or use very ripe fresh tomatoes
  • 1 can (450 gms) Cooked Fava Beans(Plain Medames)Â or use same quantity precooked, salted and softened fava beans
  • 5 Eggs
  • 2-3 Tbsp Olive oil / Evoo
  • 1 large White Onion, chopped
  • 1 tsp Garlic, minced
  • 2 Tbsp Harrisa spice powder
  • 1/2-1 Tbsp marinated Chipotle Pepper (Chipotle in Adobo sauce is used here)
  • Salt and Pepper to taste
  • 4 -5 Tbsp Grated Mozzarella
  • Chopped Parsley, to garnish
