Savory Couscous with Curried Potato
Cous Cous is one of my favorite Go To’s for a lazy weekend Breakfast. Not too many ingredients. Not too much prep work: It’s on the table in 20 minutes! You can serve Couscous with vegetable stews or even chicken.
This recipe has the fluffy hot Savory Couscous, paired with some simple curried potatoes. It’s a great Camping dish as well.
Savory Couscous with Curried Potato

Ingredients:
For the Couscous:
- 1 cup Couscous
- 2 cups water
- 2 medium onions, chopped
- 1 long, mild red chilli
- ¾ tsp garlic salt
- ¼ tsp dried tarragon
- ½ tsp dried parsley
- ¹⁄8 tsp dried thyme
- Pinch Turmeric and cumin
- 10 – 12 Fresh Basil Leaves
For Curried Potatoes:
- 2 large potatoes, cut into 8-10 pieces each
- 2 medium onions, sliced
- 1 large tomato, diced
- 2 tsp ginger (paste or chopped finely)
- 2 tsp garlic (paste or chopped finely)
- 1 mild green chili, sliced
- 2 tsp coriander powder
- 1 tsp chili powder
- ¼ tsp turmeric
- ¼ tsp Garam Masala Powder or Allspice
- some fresh coriander, chopped
- salt to taste
Method:
- In a non- stick pan heat the olive oil.
- Add the chopped onions and red chilli and cook till quite soft and light golden.
- Add the water and bring to a simmer.
- Add all the dried hebs and spices as well as the fresh basil leaves.
- Sprinkle in the Couscous and bring the water back to a boil.
- Cover. Remove from heat. Do not Peak. Allow to rest to soften and fluff up.
- Meanwhile make the potatoes.
- Heat oil in a small pot or pressure cooker.
- Add the onion and saute.
- Add the ginger and garlic along with the green chilli and saute till they no longer smell raw.
- and the spices and stir till aromatic.
- Now add the tomato and cook till softened.
- Toss in the potatoes and coat with the masala.
- Add salt to taste. Also add Fresh Coriander. (Or Basil if you like)
- Close the pressure cooker and cook for 2 steam whistles. Allow to rest. Then open.
- If using a pressure cooker, add only a splash of water to cook. Pressure cooking does not require addition of more water as the tomatoes will provide sufficient water.
