Sabzi Masala (All-purpose Spice Mix for Indian Cookery)
The Magic of Indian cookery certainly lies in the whimsical use and addition of spices. It is an art, the use, and administering of spices where needed. I have always been amazed by how a combination of spices in the right proportions can absolutely transform a dish.
Sabzi Masala is a wonderful mix that can be used sparingly in both vegetarian and non-vegetarian dishes.
When using Sabzi Masala, you can often omit the use of any other spice, apart from adding more chilli powder if you like. Where Garam Masala is often used for marination purposes or at the end of cooking, sabzi masala is often added to the cooking process or the ‘Tadka’ – tempering process in hot oil. It is a fabulous combination of spices that uses up more day to day spices than in Garam Masala.

How to make Sabzi Masala – Recipe at a glance:
- Measure out spices to be dry roasted.
- Dry roast the spices till aromatic
- Add to a spice grinder along with remaining powdered and dried spices.
- Grind to a powder. Store once cooled.

Ingredients To make homemade Sabzi Masala:
- 1 Tbsp Cumin seeds /Jeera
- 1 Tbsp Fennel seeds/ Saunf
- 1 Tbsp Coriander seeds/ Dhaniya
- 1/2 Tbsp Caraway seeds / Shahi Jeera
- 1/2 Tbsp Black Peppercorns
- 8 Cloves/ Laung
- 4 (1 inch) sticks of Cinnamon/ Dalchini
- 8 Green Cardamom/Hari Elaichi
- 3 Black Cardamom/ Badi Elaichu
- 1/4 piece of Nutmeg/ Jaiphal
- 2 small pieces from Mace/Javaitri
- 2 Tbsp Melon seeds / char magaz
- 8 Dried red chillies
- 2 Tbsp dried fenugreek leaves / Kasuri methi
- 1 tsp yellow mustard seeds /Rai
- 1 1/2 tsp Turmeric powder / Haldi
- 1 tsp dried Ginger powder/ Saunth
- 1 tsp Ground Garlic powder/ lesoon
- 1 tsp Onion powder
- 1 tsp Asafoetida
- 1/2 Tbsp Himalayan Pink Salt
