North Indian cuisine revolves around flatbreads and delicious curries. To get their distinctive flavour, Garam masala, other aromatic spices, ghee (clarified butter), and dried fenugreek leaves are extensively used as is Basmati rice. Â Punjabi cuisine has particularly influenced North Indian cooking. Punjab is the region that popularised the tandoor(clay oven) used to give a delicious smoky flavour to naan bread and tikkas.
