Tofu Scramble on Toast (Vegan breakfast)

Flavorsome Tofu Scramble is a nice Vegetarian breakfast/ brunch that can be made easily. Serve on toast with sliced avocado and juice/ coffee, for an energy and protein-packed start to your day.

Ingredients:
Extra firm pressed Tofu or Beancurd (Tau kwa) | 600 gms | |
Sunflower oil | 4 Tbsp | |
Mild Chili powder | 1 1/2 tsp | |
Smoked Paprika | 1/2 tsp | |
Ground Cumin | 1/2 tsp | |
Turmeric powder | 1/8 tsp | |
Salt | To taste(1/4 tsp) | |
Garlic, finely minced | 2 tsp | |
Carrot, julienned/grated | 1 | |
Frozen Corn kernels (thawed) | 1/2 cup | |
Tomato, diced | 1 small-size | |
Baby spinach leaves | 1/2 - 3/4 cup | |
Light soy and Seasoning (of choice) | To taste | |
Fresh cilantro or spring onion greens (for garnish) | 2 Tbsp |
Method:
- Drain the tofu or bean curd from the package and cut into large cubes.
- Heat the oil in a heavy-base wide skillet/pan.
- Add the chopped tofu. Add the chili powder, paprika cumin, and turmeric powders.
- Toss the tofu gently to get the spices mixed evenly through as they are cooked.
- Fry the tofu till slightly golden along the edges and the crust is sealed with the spices. Flip the cubes so that they are evenly cooked.
- Once fried to your liking, move the tofu to the side of the pan, reduce the heat, and add the minced garlic. Saute till fragrant.
- Add the julienned carrot and corn kernels. Toss with the garlic to absorb the flavor. Next, add the tomato and stir this with the carrot and corn till slightly softened. Add the spinach leaves.
- Now toss everything together mixing the vegetables with the tofu on the side. Distribute the vegetables evenly. Use a potato masher to slightly mash the tofu as you stir. Get the scrambled texture as per preference. You can keep it a little chunky or scramble it further.
- Add a little seasoning to taste (light soy sauce and I use mushroom seasoning granules).
- Finally, add the fresh cilantro or spring onion greens as garnish. Serve over vegan buttered toast.
- A thick slice of grilled tomato, a few slices of thick avocado, and any other grilled/cooked veggies may be served on the side. Enjoy.
