Thai Mango Salad ( with Paneer )

A fusion recipe, taking the freshness and tang of a Thai Mango salad, and adding some pan-fried paneer and sweet mango to give different sensations. My husband is a fan of this salad.

You can strike through ingredients, as you prep them, by clicking on the ingredient.

Ingredients:

Paneer cubes (at room temp) 1 cup
Ginger juice( juice from crushed ginger) ,optional 1 tsp
Green Mangoes (or use 1 green mango and 1 semi ripe mango for added flavor) – Julienne cut 2
Beansprout ½ cup
Spring onion greens, julienned ¼ cup
Salted Peanuts (or cashews), roasted ½ cup
Thai red chillies, very finely sliced To taste
Olive oil 3 Tbsp




Method:

  1. Stir together all the ingredients for the sauce. Do a taste test. It should be a good balance of sweet, sour, and spiciness.
  2. Pan-fry the paneer/cottage cheese in olive oil till golden and set aside.
  3. Toss together all the ingredients and add sauce a little at a time, testing the flavor.
  4. The paneer/ cheese should absorb just the desired amount of tanginess from the sauce.

Notes:

Variations:

  • Use green and ripe mango, diced cucumber and green capsicum instead of beansprouts and cut the mango into larger bits. Add chopped cabbage.thaifusionsalad7
  • Or use ripened mango only, diced carrots, cashews, and shredded lettuce.mango fusion with carrot

Key Ingredients: Paneer, Mango, Ginger, Nuts, Beansprout, Spring Onions, Chillies, Fish Sauce, Soy sauce, CChilli sauce, Sugar, Lime.
