Tea time Tapioca!

Description

Tea time Tapioca is for a savoury snack made from the Tapioca/Cassava root, a fluffy, hot side dish that can be enjoyed with tea. It is a quick, no-oil recipe.

Ingredients:

Instructions

  1. Cut the tapioca into 3 sections. Peel the tapioca sections and cut into chunks. Remove the inner vein if present. It is a tough vein that runs through the centre and may not be preset for very tender tapioca.
  2. Cook till tender with salt. I use a pressure cooker with very little water. Cook till you hear 1 steam for very fresh tapioca, or up to 3 steams. It will be cottony -fluffy this way.
  3. Crush the shallots on a stone (mortar).
  4. Add the grated coconut and curry leaves to the shallots and use your hands to massage the coconut and shallots together. No pounding here.
  5. Strain out all the water from the cooked tapioca in the pressure cooker.
  6. Add the coconut-shallot mixture to the hot tapioca with a dash of salt. Toss everything together lightly.
  7. Close the cooker, and allow it to rest in its own steam briefly.
  8. Once you have made some tea, open and serve this comfort food - Teatime Tapioca!

Note

  • Only fresh tapioca must be used for this recipe. Fresh tapioca is fluffy and soft once cooked. If your tapioca has been sitting in the fridge for a while, it tends to be denser and more yellow in colour when cooked. It is better for saute, stewed or stir-fry dishes.
