Ingredients:
Coriander seeds /Sabut dhania | 200 gms | |
Cumin seeds /Jeera | 200 gms | |
Black cumin / Shahi jeera / Caraway seeds | 50 gms | |
Black peppercorns | 50 gms | |
Star anise/ Chakra phool | 30 gms | |
Green cardamom/ Choti Hari elaichi | 1 1/4 Tbsp | |
Black cardamom pods /Badi elaichi | 4 | |
Cloves/ Laung | 3 Tbsp | |
Ground nutmeg/ Jaiphal | 1 Tbsp | |
Dried rose petals | 125 gms |
Method:
- Dry toast the spices in a pan till fragrant stirring continuously for 2 minutes, adding rose petals last.
- Grind to a fine powder. Allow to cool and store in airtight jars
- Makes 1/2 kg Tandoori masala powder.
Notes:
