Taiwanese Fried Chicken Streetfood
Description
Taiwanese Fried Chicken – a popular street snack is just so good. (Also known as XXL Fried Chicken) . The good news is that it can be made at home with ease. Yes! You found the copycat recipe here!
Ingredients
For the 'Marinade'
Instructions

Pound the chicken breasts, as evenly and thinly as possible using a kitchen mallet.

Marinate the chicken with the ingredients under 'Marinade' for an hour.

To a bowl, add the glutinous rice flour, salt to taste and enough water to make a batter of 'thick buttermilk' consistency.

Add this batter over the marinated chicken and mix well. Set aside for another 10 minutes.

Mix the sweet potato flour and salt to taste in another bowl to make a dry mix.

Heat oil for deep frying. Use a wide and deep pan or wok.

Remove one piece of xxl chicken from the batter.

Dredge the chicken in the flour mixture. Make sure to coat thoroughly. Shake off excess flour.

Dip into hot oil and fry till a pale gold color, turning a few times.

Remove from oil onto kitchen paper towels and cut into bite size pieces using kitchen scissors.

Sprinkle some mild chili powder/ or paprika ( optionally add some pepper also) while hot. Serve with small bamboo skewers.
Note
- The sweet potato flour coating does not turn brown while frying. It remains very light in color after frying. Do not try to make it turn dark golden brown or you will over fry and dry out the chicken.
- Dipping the chicken first in the glutinous flour batter makes this chicken extremely moist while the sweet potato flour gives it an awesome crunchy outside!
- You can also add Chinese five spice powder if you like the flavor.
