Sulaimani – A Malabar Tea
Description
The name "Sulaimani" comes from the Arabic word "Sulaiman," which means "man of peace." This name was coined by the locals in the Malabar area, because of the friendship they had with the Arab Merchants and Settlers. Over time, the tea gre in popularity and is known as "Sulaimani Tea" or "Sulaimani Chaya (Chai)."

Add the water to a saucepan and bring to a boil, adding the spices. Allow to boil for 1 minute.

Add sugar and tea dust. Boil till the tea is , strong and somewhat dark.

Strain into tea pot and add lemon to taste. Stir through and add the mint leaves on top.

Serve hot.
Note
- A little fresh grated ginger, is sometimes added to this tea.
