South Indian Fried Shrimp
Fast and flavorful Shrimp or Prawn Varuval. That’s the magic of South Indian Fried Shrimp. Not dry here but with a moist masala coating the prawn stir-fry.

Ingredients:
Shrimp or prawn, smaller variety if available ( cleaned, deveined) | ½ kg | |
Coconut oil | 2 Tbsp | |
Curry leaves | A sprig | |
Ginger, minced | 1½ tsp | |
Garlic, minced | 1½ tsp | |
Green chillies or according to spice level | 4-5 | |
Shallots,sliced into rounds | 1 cup | |
Fresh coconut bits/slivers (not grated coconut) | ¼ cup | |
Turmeric powder | ¼ tsp | |
Chili powder | ¾ tsp | |
Coriander powder | ¾ | |
Garam Masala powder | ½ tsp | |
FishTamarind (Gambooge(Kudampuli) washed well, soaked if needed | 1-2 pieces | |
Salt | To taste |
For Marinating:
Lime juice | 2 tsp | |
Salt | ½ tsp | |
Turmeric powder | ¼ tsp | |
Chili powder | ¼ tsp | |
Coconut oil | 2 tsp | |
Curry leaves | a Handful |
Method:
- Firstly, combine all the ingredients to marinate and rub into the cleaned and drained shrimp/prawn.
- Set aside for 15 minutes.
- Next, heat coconut oil in a wok. Add the curry leaves.
- When spluttered, add the ginger, garlic and green chilli and saute till softened.
- Add the shallots and saute well.
- Add the coconut bits and stir well.
- Reduce the heat to low and add all the spice powders. Stir-fry till aromatic. Sprinkle some water.
- Add the fish tamarind and the marinated prawns and stir well. Also, add some salt to taste.
- Raise the heat, cover and cook, stirring occasionally till oil separates, prawn is cooked & gravy is thick and coats the prawn well without becoming overly dry (3-5 minutes).

Notes:
- The same method can be used to prepare calamari/squid.
