Sabzi Masala is the quintessential "all-purpose" seasoning for Indian vegetable cookery, designed to elevate everyday produce into a fragrant, flavorful meal. This balanced blend of aromatic spices, adds warmth and flavour to any dish. Whether you are preparing a dry sauté of potatoes and cauliflower or a saucy mixed vegetable curry, a few spoonfuls of this masala provide a consistent, restaurant-quality base. It is an essential pantry staple for anyone looking to master the art of the Indian "Sabzi" with ease.

  1. Add all the whole spices from Cumin seeds up to (and including) Mace to a dry pan.
  2. Dry roast on a medium flame for 4 minutes.
  3. Remove from the heat to a spice grinder.
  4. While the spices are still hot, add all other ingredients from the Melon seeds to the Salt.
  5. Grind to a fine powder.
  6. Allow to cool off before storing tightly in a sterile glass jar.

Note

  • I usually add 1 tsp of turmeric powder first and then add the remaining to adjust the color. Sabzi Masala should have a little bit of that turmeric yellow hue to it.
  • Amchur, dry mango powder, is often added to sabzi masala. I prefer to add it separately, according to the dish.
  • A simple method to use Sabzi Masala: Chop up vegetables like potato, cauliflower, beans, carrot. You can add chickpeas, green peas, onion, and paneer. Blanch or boil the vegetables that require it. Heat oil. Saute some ginger-garlic paste and add parboiled or blanched vegetables. Add sabzi masala, a little whipped yogurt, a dash of water, and salt to taste. Cover and cook a while till tender.
