Sabzi Masala (All purpose Spice Mix for Indian Cookery)

Sabzi masala is a special spice mix used in Indian Kitchens that enhances any dish. It adds flavor, color, and aroma to not only simple, everyday vegetable preparations, but can be added to Non-veg preparations as well. Much like an all-purpose seasoning mix for Indian-style vegetable preparations.

Ingredients:
Cumin seeds /Jeera | 1 Tbsp | |
Fennel seeds/ Saunf | 1 Tbsp | |
Coriander seeds/ Dhaniya | 1 Tbsp | |
Caraway seeds / Shahi Jeera | 1/2 tbsp | |
Black Peppercorns | 1/2 Tbsp | |
Cloves/ Laung | 8 | |
Cinnamon/ Dalchini | 4 (1 inch) sticks | |
Green Cardamom/Hari Elaichi | 8 pods | |
Black Cardamom/ Badi Elaichi | 3 pods | |
Nutmeg/ Jaiphal | 1/4 piece | |
Mace/Javaitri | 2 small pieces | |
Melon seeds / Char magaz | 2 Tbsp | |
Dried red chillies | 6-8 | |
Dried fenugreek leaves / Kasuri methi | 2 Tbsp | |
Yellow mustard seeds /Peeli Sarson Beej | 1 tsp | |
Turmeric powder / Haldi | 1 1/2 tsp | |
Dried Ginger powder/ Saunth | 1 tsp | |
Dried Garlic powder/Lehsoon | 1 tsp | |
Dried Onion powder | 1 tsp | |
Asafoetida / Hing | 1 tsp | |
Himalayan Pink Salt | 1/2 Tbsp |
Method:
- Add all the whole spices from Cumin seeds up to (and including) Mace to a dry pan.
- Dry roast on a medium flame for 4 minutes. Remove from heat to a spice grinder.
- While the spices are still hot, add all other ingredients from Melon seeds to the Salt.
- Grind to a fine powder. Allow to cool off before storing tightly in a sterile glass jar.

Notes:
- I usually add 1 tsp of turmeric powder first and then add the remaining to adjust the color. Sabzi Masala should have a little bit of that turmeric yellow hue to it.
- A simple method to use Sabzi Masala: Chop up vegetables like potato, cauliflower, beans, carrot. You can add chickpeas, green peas, onion, and paneer. Blanch or boil the vegetables that require it. Heat oil. Saute some ginger-garlic paste and add parboiled or blanched vegetables. Add sabzi masala, a little whipped yogurt, a dash of water, and salt to taste. Cover and cook a while till tender.
