Riso Venere – Forbidden Rice Salad
Description
Riso Venere, also known as Italian black rice, is a variety of rice grown in northern Italy. It has a distinctive dark color, almost black in appearance, which comes from its high levels of anthocyanins – the same antioxidants found in blueberries. It has a nutty, earthy flavor which are highlighted in this Salad. Chinese black rice is a suitable substitute.

Cook the black rice according to package instructions. It should be al-dente and not overly cooked. My rice was cooked with about 3 cups of water.

Fluff up the rice once cooked. Allow to cool off completely.

Cook and drain the green peas and barley. Also, remove the seeds of the pomegranate as needed and set aside.

When ready to prepare the salad, add all the cooked and cooled ingredients to a bowl, along with the copped leaves and almond flakes. Toss well. Next, add the crumbled feta cheese and drizzle the olive oil. Add salt and pepper to taste and toss everything together once more. Serve at room temperature.
