Riso Venere
A great combination of textures and flavours is what makes this healthy salad. Definitely a ‘feel good’ salad made with black rice!

Ingredients:
Riso Venere ( Italian short grain black rice) Or Fragrant Chinese black rice | 1 1/2 cups | |
Pomegranate seeds | 1 cup | |
Cooked green peas | 1/2 cup | |
Cooked pearl barley | 1/4 cup | |
Rocket (Arugula) Salad leaves, chopped up | 1/2 cup | |
Extra virgin olive oil | 2 Tbsp | |
Flaked almonds | 1/4- 1/2 cup | |
Traditional feta cheese, crumbled | 1/2 cup | |
Salt and Pepper | To taste: |
I really love the pomegranate and feta in this recipe, so please don’t leave them out.
Method:
- Cook the black rice according to package instructions. It should be al-dente and not overly cooked. My rice was cooked with about 3 cups of water.
- Fluff up the rice once cooked. Allow to cool off completely.
- Cook and drain the green peas and barley. Also, remove the seeds of the pomegranate as needed and set aside.
- When ready to prepare the salad, add all the cooked and cooled ingredients to a bowl, along with the copped leaves and almond flakes. Toss well. Next, add the crumbled feta cheese and drizzle the olive oil. Add salt and pepper to taste and toss everything together once more. Serve at room temperature.
