Raw Mango Chilli Salad with Torch Ginger
This is my version of Green Mango Kerabu Salad, keeping it a little more simple. Kerabu salad often includes Chopped Mint and sliced Shallots. I have skipped these, although you may like to add them. A tongue-tingling, refreshing fresh salad , that is a great side dish. I love to serve it with fried rice. It is great with spicy main dishes too.

Prep time 10 minutes. Serves 4
You can
strike throughingredients, as you prep them, by clicking on the ingredient.
Ingredients:
Green mango (peeled and cut julienne, as finely as possible ) | 1 large sized | |
Torch Ginger (outer layer peeled and then finely chopped ) | 1 Bud | |
Mild long red chilli, sliced | 1 | |
Light soy sauce | 1/4 tsp | |
Thai fish sauce | 1/4 tsp | |
Roasted finely chopped peanuts, as topping- optional | 2 Tbsp |
Method:
- Add the julliened green mango into a bowl, along with the chopped torch ginger and red chilli.
- Add fish sauce and soy sauce and toss everything till mixed. Chill till time to serve. It is best chilled
- Put into serving dish and top with roasted peanut topping just before serving.

- Additional optional ingredients, may include, chopped hot green chilli, chopped fresh mint, sliced shallots.
