This is my version of Green Mango Kerabu Salad, keeping it a little simpler. Kerabu salad often includes Chopped Mint and sliced Shallots. I have skipped these, although you may like to add them. A tongue-tingling, refreshing salad, that is a great side dish. I love to serve it with fried rice. It is great with spicy main dishes too.

Raw Mango Salad (with Torch Ginger)
Description
Often known as Kerabu Mangga in Malaysia or Southeast Asian cuisine, a green mango with torch ginger salad is a vibrant, aromatic explosion of flavors. It strikes a perfect balance between sour, sweet, salty, and spicy, with a unique floral depth that sets it apart from other fruit salads.

Add the julliened green mango into a bowl, along with the chopped torch ginger and red chilli.

Add fish sauce and soy sauce, and toss everything till mixed. Chill till time to serve. It is best chilled

Put into a serving dish and top with roasted peanut topping just before serving.

- Additional optional ingredients may include chopped hot green chilli, chopped fresh mint, and sliced shallots.
