    Quick Creamy Mushroom Spaghetti

    Description

    This dish is a "lazy day lifesaver"—a rich, velvety pasta that relies on the deep umami of Shimeji mushrooms and the aromatic punch of sautéed garlic. It is designed to be prepared in under 30 minutes, making it an ideal choice for a quick weeknight dinner that doesn't compromise on gourmet flavor. This dish is best served immediately, straight from the skillet, while the sauce is at its peak silkiness.

    1. Bring a large pot of water to a boil. Add 2 tsp salt. Add the spaghetti and cook for 9-11 minutes till cooked. Stir a few times in between. Drain the pasta. Reserve some of the pasta cooking water.
    2. Heat the butter in a large skillet and add the finely minced garlic. When fragrant, add the onions and stir till softened.
    3. Now add the Shimeji mushroom. Stir fry for just under 2 minutes.
    4. Pour in the cream and stir briskly. Season as desired. I like to add a spoon or two of Knorr seasoning to taste, as well as black pepper (coarse grain). You can just add salt and pepper if you prefer.
    5. Add some of the pasta water to loosen and quickly toss in the spaghetti, till coated well. Serve on its own or with Black Pepper Beef.  (Both recipes shown in the easy meal prep video)

    Note

    • Upon resting, the spaghetti tends to absorb the cream and become drier. Simply reheat with a dash of water, topping off with some extra cream just before serving.
