Crispy on the outside and tender within, each golden-fried ball is packed with a savory blend of spiced minced chicken, fresh ginger, and garlic, all bound together with day-old rice. The result is a delightful fusion of texture and taste that’s both satisfying and surprisingly light.

Whether you serve them with a sweet and tangy dipping sauce, like ketchup or a spicy chili sauce, or enjoy them on their own, these Chicken Rice Balls are a testament to the magic of simple cooking. They are a true crowd-pleaser and will quickly become a go-to recipe in your kitchen.

  1. Heat a little oil in a non-stick wok.
  2. Add and saute the spring onion bulb till softened, followed by the garlic and ginger, and continue to saute till fragrant and cooked, without changing color.
  3. Add the carrot/ or other vegetables and stir-fry till softened as well.
  4. Next, add the minced chicken, turn up the heat, and stir-fry till opaque and cooked through - about 3 -5 minutes. Stir well to prevent any large clumps from forming.
  5. Add sesame oil and stir through.
  6. Add the ingredients for seasoning option 1, OR seasoning option 2 - as desired.
  7. Add soya sauce and allow any moisture to evaporate. Add salt and pepper to taste, if needed.
  8. Add the chopped spring onion and coriander leaves. Stir through.
  9. Turn off the heat and allow the chicken mixture to cool off for a while.
  10. Mix in the cold rice and mix with your hands into balls the size of small limes.
  11. Heat very little oil in the (cleaned-out) frying pan and dip each prepared rice ball into the beaten egg mix,  and then pan-fry gently, turning till golden all over.
  12. You may also choose to bake these in the oven for 5 minutes at a moderate temperature.
  13. Serve with a few squeezes of ketchup or chilli sauce, and chopped spring onions, if you like it like that!!

Note

  • You can try mixing in your favorite elements to suit your tastes. Whatever works for your own little fussy eaters.
  • Instead of the suggested spice mix, you can try any other herbs or spices you like.
  • Serve these balls over shredded lettuce with cocktail picks and extra sauce to make a Party Appertizer. They are best if served warm.
