Quick Chicken Rice Balls

Quick and Simple. Chicken and Rice made into Rice Balls.. Great way to feed fussy eaters! Great Party Appetizer.

15 minute Chicken Rice Balls

You can strike through ingredients, as you prep them, by clicking on the ingredient.

Ingredients:

Thai or Jasmine rice- cooked ( Day old rice from the fridge is best) 2 cups
Minced Chicken 500 gms
Spring onion (white bulb portions), chopped finely 3 Tbsp
Garlic, chopped finely 1 tsp
Ginger, chopped finely 1 tsp
Small Carrot, chopped extra finely 1
1/4 tsp pepper powder, 1/4 tsp ground cumin, 1/2 tsp paprika / mild chilli powder Seasoning option 1:
1 tsp any of the following (chicken seasoning powder, chilli powder, curry powder, mushroom powder, etc) Seasoning Option 2
Light soya sauce 1-2 Tbsp
Salt and Pepper To taste
Oil 3-4 Tbsp
Spring Onion greens 2 Tbsp
Chopped coriander leaves 2 Tbsp
Eggs beaten with salt and pepper 2-3




Method:

  1. Heat a little oil in a non-stick wok.
  2. Add and saute the spring onion bulb till softened, followed by the garlic and ginger, and continue to saute till fragrant and cooked, without changing color.
  3. Add the carrot/ or other vegetables and stir-fry till softened as well.
  4. Next, add the minced chicken, turn up the heat, and stir-fry till opaque and cooked through – about 3 -5 minutes. Stir well, to prevent any large clumps from forming.
  5. Add sesame oil and stir through.
  6. Add the ingredients for seasoning option1, or seasoning option2 – as desired.
  7. Add soya sauce and allow any moisture to evaporate. Add salt and pepper to taste, if needed.
  8. Add the chopped spring onion and coriander leaves. Stir through.
  9. Turn off heat and allow the chicken mixture to cool off for a while.
  10. Mix in the cold rice and mix with hands into balls the size of small limes.
  11. Heat very little oil in the (cleaned-out) frying pan and dip each prepared rice ball into the beaten egg mix,  and then pan-fry gently turning – till golden all over.
  12. You may also choose to bake these in the oven for 5 minutes at a moderate temperature.
  13. Serve with a few squeezes of ketchup or chilli sauce, and chopped spring onions, if you like it like that!!

Notes:

  • You can try mixing in your favorite elements to suit your tastes. Whatever works for your own little fussy eaters.
  • Instead of the suggested spice mix, you can try any other herbs or spices you like.
  • Serve these balls over shredded lettuce with cocktail picks and extra sauce to make a Party Appertizer. They are best if served warm.

Key Ingredients: Rice, Chicken, Egg, Spring Onion, Garlic, Ginger,  Coriander, Carrot, Seasoning, Soy sauce, Salt, Pepper, Oil.
