Ingredients:
Instructions
-
Heat a little oil in a non-stick wok.
-
Add and saute the spring onion bulb till softened, followed by the garlic and ginger, and continue to saute till fragrant and cooked, without changing color.
-
Add the carrot/ or other vegetables and stir-fry till softened as well.
-
Next, add the minced chicken, turn up the heat, and stir-fry till opaque and cooked through - about 3 -5 minutes. Stir well to prevent any large clumps from forming.
-
Add sesame oil and stir through.
-
Add the ingredients for seasoning option 1, OR seasoning option 2 - as desired.
-
Add soya sauce and allow any moisture to evaporate. Add salt and pepper to taste, if needed.
-
Add the chopped spring onion and coriander leaves. Stir through.
-
Turn off the heat and allow the chicken mixture to cool off for a while.
-
Mix in the cold rice and mix with your hands into balls the size of small limes.
-
Heat very little oil in the (cleaned-out) frying pan and dip each prepared rice ball into the beaten egg mix, and then pan-fry gently, turning till golden all over.
-
You may also choose to bake these in the oven for 5 minutes at a moderate temperature.
-
Serve with a few squeezes of ketchup or chilli sauce, and chopped spring onions, if you like it like that!!
