Prawn Tikka | Shrimp Tikka

How simple these delicious Prawn Tikka | Shrimp Tikka skewers are to make! Perfect for the BBQ. They can be grilled under the broiler or on a frying pan as well. Good to have a recipe for your next dinner party!

Prawn Tikka | Shrimp Tikka

Ingredients:

medium-sized prawn/shrimp 20
fenugreek powder ¼ tsp
Ginger Garlic ( a Tbsp of each crushed to a fine paste) 2 Tbsp
Lemon Juice (small Indian limes work great) 2 Tbsp

curry leaves OR for a distinct aroma use ¾ tsp powdered curry leave powder if available 10 fresh
fresh cilantro /coriander 1 cup
fresh mint leaves ¼ cup
green chillies 2 long
'hung' yoghurt 1 cup
fresh cream 3 Tbsp
Kashmir chilly powder 2 tsp
Garam Masala powder ½ tsp
Cornflour 2 Tbsp
oil /Mustard oil 3 Tbsp
egg, beaten 1
salt and pepper To taste:




Method:

  1. Peel, devein the prawns leaving just the tail tip intact for decorative purposes if desired.
  2. Marinate the drained prawn with half the ginger garlic paste, fenugreek powder, lehung yoghurtmon juice and salt and leave for 30 minutes.
  3. Meanwhile, leave the yoghurt to hang in a muslin cloth to remove the whey and get a thickened yoghurt.
  4. Grind the curry leaves, coriander, mint and green chillies to a fine paste.
  5. In a bowl, combine this coriander paste with the yoghurt, cream, remaining ginger-garlic paste, chilli powder, garam masala, cornflour, oil and egg.
  6. Mix well till you get a homogenous mixture.
  7. Squeeze out the excess moisture from the prawns gently and add to this Yoghurt Mixture.
  8. Refrigerate for 1 hour.
  9. Preheat oven 200ºc /400º F
  10. Thread the prawns onto skewers leaving some space between each. Drizzle the marinade over them
  11. Broil or cook in the preheated oven for 3 minutes on each side basting with a little mustard oil in between.
  12. Alternatively, they can be cooked on a grill pan 3-4 minutes each side till cooked.
  13. Serve hot. Cover with aluminium foil till served.
  14. Serve with lemon wedges and salad.
