Peanut Masala / Salad

My favourite Poolside snack.. after an evening of swimming or as a late evening snack on any day. Crunchy and Savory.

Peanut Masala

Ingredients:

Roasted, unsalted peanuts or groundnuts 1 cup
Tomatos (deseeded - small diced) 2
Red onion, very finely chopped 1 small size
Coriander leaves,  finely chopped 2 -3 Tbsp
Red Chilli powder (or to taste) 1-2 tsp
Lime juice (freshly squeezed) 2 Tbsp  
Chat masala 1 tsp
Oil ( a drizzle) As needed




Method:

  1. To a non-reactive bowl, add the chopped onion,  tomato,  chat masala,  salt, and lemon juice.
  2. Stir to combine drizzling some oil.
  3. Just before serving, add the roasted peanuts. Toss well.
  4. Sprinkle the coriander leaves and chilli powder, all over the top. Serve immediately.

Notes:

Notes: Non – ReactiveBowl:: A glass, ceramic, or stainless steel bowl, not an aluminum or cast-iron one. Non-reactive bowls should be used while preparing and storing dishes, such as dressings or marinades, which contain acidic ingredients such as vinegar or lemon juice.

Key Ingredients: Peanuts / Groundnuts, Tomato, Onion, Lime, Coriander, Salt.
