Mutta Puttu (Egg Puttu)

A quick and tasty recipe to use up leftover Puttu. Mutta Puttu is a breakfast recipe that will come in very handy!

Ingredients:
Prepared Puttu (or 3 Chiratta Puttu) | 3 cups approximately | |
Eggs, beaten | 3 | |
Coconut Oil | 3-4 Tbsp | |
Mustard seeds | 1/2 tsp | |
Dried red chillies , broken | 2 | |
Red onions, chopped finely | 2 medium-sized | |
Ginger, finely chopped | 2 tsp | |
Green chillies, chopped | 2 (or to taste) | |
Curry leaves | 1 sprig | |
Kerala Garam Masala | 1-2 tsp (to taste) | |
Meat Masala powder | 1-2 tsp (to taste) | |
Turmeric powder | 1/2 tsp | |
Coriander powder | 1 tsp | |
Fennel powder | 1/2 tsp | |
Tomatoes, chopped | 2 | |
Salt | To taste | |
Fresh coriander leaves, chopped | 3 Tbsp |
Method:
- Heat coconut oil(3Tbsp),in a non-stick pan or wok.
- Add the mustard seeds(1/2tsp) and allow them to pop. Follow this with the dried red chilli(2Nos) and fry briefly, till fragrant but not dark.
- Add the chopped onion(2Nos), ginger(2tsp), green chilli(2Nos) and curry leaves(1sprig). Saute till softened on low-medium flame for about 1 minute.
- Now you may either use leftover gravy from any curry(3/4. cup) and saute till the oil separates. OR proceed with fresh spices⇓.
- Add Garam masala(1tspfirst), Meat masala(1tspfirst), Turmeric powder(1/2tsp), Coriander powder(1tsp) and Fennel powder(1/2tsp). Stir till the spices are cooked, sprinkling water to prevent any scorching.
- Once the spices no longer smell raw, add the chopped tomatoes. Cook till the tomatoes are softened to a pulp, sprinkling water as needed to prevent any scorching of the spices. (Do note that if you are using leftover gravy, you don’t need to add tomatoes either).
- Add more meat masala and garam masala if needed after tasting.
- Now the masala is ready, we can add the beaten eggs(beaten well till fluffy). Add the eggs and wait till they start to set. Stir once and wait till it starts to set a bit more once again. Now you can scramble the eggs, adding salt to taste. Don’t over-scramble or over-cook, they should remain a bit moist.
- Now crumble the prepared Puttu into the pan. If your Puttu is day old, you will want to microwave or steam it with a sprinkling of water to soften it first. The Puttu must be soft!
- Stir-fry, incorporating the dry Puttu into the masala, moistening it and breaking any lumps as you do so. Add more salt to taste as you go. It will resemble the texture of Upma.
- Lastly, add the fresh coriander leaves and toss through.
- Serve the puttu as in my pic or mould it using a bowl and invert onto serving plate if you prefer that presentation.
