Malaysian Fish Curry Powder (RAS)

Description

This unique blend is a cornerstone of Malaysian-Indian cuisine, specifically the "Mamak" style of cooking. It reflects a beautiful fusion of South Indian culinary traditions with the local tastes. The resulting curry is known for its rich, fiery, and aromatic profile, often served with roti canai (a type of flatbread) or steamed rice.

  1. Add all the whole spices from Cumin seeds up to (and including) Chana dal to a dry pan.
  2. Dry roast on a medium flame for 4 minutes, stirring regularly. Remove from heat to a spice grinder.
  3. Cool off a bit and then add all other ingredients from Coriander powder to the Himalayan Salt.
  4. Grind to a fine powder. Allow to cool off before storing tightly in a sterile glass jar.
