Malaysian Fish Curry Powder

A rich Malaysian-style Fish Curry Powder for Indian-Malay Fish Curry. Use it when you want to add a rich fish curry taste to curries. It can also be used to marinate seafood! I will also show you how to use this Fish curry powder to make the delicious Fish Curry that is so often served with Roti Prata in Malaysia and Singapore.

Ingredients:
Cumin seeds | 3 Tbsp | |
Fennel seeds | 1 1/4- 1 1/2 Tbsp | |
Fenugreek seeds | 3/4 - 1 Tbsp | |
Black Peppercorns | 3/4 Tbsp | |
Chana dal | 3/4 Tbsp | |
Coriander powder | 5 Tbsp | |
Chilli powder (mild Kashmiri chilli powder) | 4 1/4 Tbsp | |
Turmeric powder | 1 Tbsp | |
White pepper powder | 3/4 Tbsp | |
Himalayan Salt Crystals | 1/2 tsp |
Method:
- Add all the whole spices from Cumin seeds up to (and including) Chana dal to a dry pan.
- Dry roast on a medium flame for 4 minutes, stirring regularly. Remove from heat to a spice grinder.
- Cool off a bit and then add all other ingredients from Coriander powder to the Himalayan Salt.
- Grind to a fine powder. Allow to cool off before storing tightly in a sterile glass jar.
