Lemon Cloud Pie Dessert
A lemony sweet dessert with biscuit crumb crust. Great for weekend desserts or special occasions.

Ingredients:
Evaporated milk | 1 can (395 gms) | |
Ritz original crackers | 300 gms | |
Unsalted , melted butter | 3/4 cup | |
Water | 1 cup (240 ml) | |
Lemon Jello | 1 Pack (90 gms) | |
Sugar | 1/2 cup | |
Vanilla bean paste or extract | 1 tsp | |
Freshly squeezed Lemon juice (Do not use concentrate or essence). | 3 Tbsp |
Method:
- Add the evaporated milk to a shallow bowl. Place this in the freezer till it starts to freeze and crystalize around the edges and top only.
- Put the Ritz crackers (salt biscuits) in a food processor and process to a crumb.
- Add this to a bowl and add the melted butter. Mix well.
- Press 3/4 of this mixture into a 9 ” greased Pie dish on the bottom and sides.
- Refrigerate the pie base, covered till chilled, reserving the remaining crumbs for later (for topping).
- Heat one cup water in a saucepan and add the lemon jello. Stir well, once it starts to boil, remove from heat.
- Pour this into a bowl and refrigerate till it thicken slightly. It will not set into jello, just a syrupy thick texture.
- Add the sugar and Vanilla bean paste into a third bowl. Whisk well to mix the vanilla throughout the sugar evenly. Set aside this vanilla sugar.
- Add the thickened jello water to this and whisk well.
- Add freshly squeezed lemon juice and stir through.
- Once the evaporated milk has crystalized somewhat, remove from fridge and use a wire whisk to beat till it’s slightly stiff.
- Pour this into the Jello- Sugar mixture and mix once again.
- Pour over the chilled pie crust. Add the remaining biscuit crumbs evenly over the top.. Lightly sprinkle so that you don’t disturb the filling.
- Cover with foil or saran wrap and chill completely. 3 hours at least, and best results with overnight chilling.

Notes:
- Only use freshly squeezed lemon juice. Using extract will ruin this dessert.
- Ritz crackers are salt biscuits. It works well in this recipe. You could replace it with Graham crackers for a different taste.
- You could experiment here, with other flavors of jello.
