Kerala Fried Prawns

Description

Whip up a taste of Kerala in minutes with this unbelievably easy prawn fry! Succulent prawns are quickly seasoned with the most basic spices and then pan-fried to juicy perfection, and covered with a simple pan-roasted garnish - delivering an explosion of South Indian flavor in every bite.

  1. Heat a small saucepan. Add the prawns, half the turmeric, half the cracked pepper, rock salt, and just a couple of spoons of water, and cook the prawns turning once just till they turn white. Do not overcook. Set aside.
  2. In another non-stick frying pan, heat coconut oil and add mustard seeds. Allow them to splutter.
  3. Now add curry leaves, followed by the chilly powder and the remaining turmeric and pepper with a pinch of rock salt – just till it turns aromatic. Do not burn the spices.
  4. Lay the prawns flat in one layer and fry on one side for just 30 seconds and then turn them all over for another 30 seconds. Stir around till they are nicely crisped all around. Just another 30 seconds should do. Remove to a serving dish.
  5. In the same flavored oil add the sliced onion rings and chilies and toss to coat. Do not overcook, they should remain crunchy. Use as a garnish, topped by fresh coriander leaves and a squeeze of lemon.

Note

  • Frozen prawns do not work so great in this recipe, especially if they are the cooked and frozen type. Fresh prawns only, please. Large grey prawns or tiger prawns works best!
