Japanese Curry (Karē Raisu)

Japanese Curry (Kare): Dive into a robust symphony of flavors! This hearty Japanese Curry features a roux (blend of unique spices and aromatics) which is simmered to perfection. Served over fluffy steamed rice, it’s a classic comfort food. Customize your curry with a variety of protein options, like chicken, beef, shrimp or just vegetables. We are using the classic combo chicken and potato, with carrots added if you like.

Japanese Curry

You can strike through ingredients, as you prep them, by clicking on the ingredient.

Ingredients:

Boneless Chicken, cubed 600 gms
Onions (1 Red, 1 Yellow), chopped 2
Garlic, chopped 4 large cloves
Potatoes, cubed 2
Carrot, chopped (optional for sweetness) 1 large
Japanese curry cubes (60-80 gms) - check notes for homemade recipe 3-4
Oil 2 Tbsp
Water As needed (2-3 cups)




Method:

  1. Heat oil in a wide nonstick wok/pan.
  2. Add garlic and onion and allow to sweat. 1 minute.
  3. Add in the chicken and toss on high heat. 1 minute.
  4. Add potato and optional carrot and stir fry till chicken turns white. 2 minutes.
  5. Add 1 1/2 cups water and bring to a boil. Reduce heat, cover, and simmer until ingredients are tender, approx. 8 mi utes.
  6. Add curry cubes (60 gms) and stir vigorously till thoroughly melted into the curry sauce and incorporated.
  7. Add more water as needed to loosen the thickened curry. (Curry Cubes will promote thickened sauce)
  8. You can add another curry cube or additional spice powders like coriander powder, paprika. chilli powder and salt as needed. MSG is also added occasionally. 1/4 tsp.
  9. Simmer briefly and remove from heat.
  10. Serve hot with Japanese Rice / Steamed White Rice.
