Instant Garlic Sauce with Potato
A quick and easy Garlic Sauce / Dip. This is an Instant Garlic Sauce with potato as the secret ingredient.

Ingredients:
Potato, boiled | 1 large | |
Garlic cloves ( large cloves) | 2-3 | |
Milk | 3/4 cup | |
Pasteurized egg white ( optional- gives a better consistency to the sauce) | 1 | |
Oil (Sunflower Vegetable or Corn oil ) | 1/2 cup | |
fresh lime juice | 1 tsp | |
Salt ( to taste) | 1/4 - 1/2 tsp | |
Olive oil | 1 - 2 tsp |
Method:
Boil the potato in its skin till tander. It shoul be cooked enough too mash easily. Allow to cool off slightly.
- Add the potato to a blender along with garlic. Add 2 cloves first and add one more later if you need it. Don’t add too much garlic in this sauce, as it have a ‘burn sensation’.
- Add the milk and blend till smooth.
- Once smooth, add the egg white (if using), and continue blending till you notice the consistency becomes fluffier.
- Now pour in the oil and keep blending. The sauce will be smooth and of a flowing consistency.
- Pour into serving bowl or jar. stir in the lime juice and salt.
- Lastly stir in the Olive oil – this boosts flavor.
- Serve with grilled Chicken, BBQ, Fragrant Rice dishes etc..
Instant Garlic Sauce with Potato
Notes:
- Use only neutral flavored oils like sunflower oil for this recipe. The small amount of olive oil at the end is a flavor booster. However, if you make the sauce entirely of olive oil, it will have a rather heavy taste.
- Use potatos that do not have a slimy texture when mashed. Hertha Potatos work well.
