Instant Garlic Sauce with Potato
Description
This recipe leverages the creamy texture of potatoes to create a quick and easy garlic sauce. It's perfect for dipping, spreading, or an accompaniment with Rice and Grilled Meats.

Boil the potato in its skin till tender. It should be cooked enough too mash easily. Allow to cool off slightly.

Add the potato to a blender along with garlic. Add 2 cloves first and add one more later if you need it. Don’t add too much garlic in this sauce, as it have a ‘burn sensation’.

Add the milk and blend till smooth.

Once smooth, add the egg white (if using), and continue blending till you notice the consistency becomes fluffier.

Now pour in the oil and keep blending. The sauce will be smooth and of a flowing consistency.

Pour into serving bowl or jar. stir in the lime juice and salt.

Lastly stir in the Olive oil – this boosts flavor.

Serve with grilled Chicken, BBQ, Fragrant Rice dishes etc..
Note
- Use only neutral-flavored oils like sunflower oil for this recipe. The small amount of olive oil at the end is a flavor booster. However, if you make the sauce entirely of olive oil, it will have a rather heavy taste.
- Use potatoes that do not have a slimy texture when mashed. Hertha Potatos work well.
