Honeydew Katira Drink | Ramadan Drink

Honeydew Katira Drink is a popular drink during Ramadan in Singapore and Malaysia. The filling refreshment! Mixed cooling ingredients like Gum Tragacanth, Basil Seeds, Malva Nuts, combined with fresh Honeydew and Pandan flavored milk- all in this drink!

Honeydew Katira Drink recipe

Ingredients:

Milk 3 cups (1 cup =240 mls)
Sweetened Condensed milk 3/4 cup (or to taste)
Pandan Leaves 3
Fresh Honeydew Melon 450-500 gms
Gum Tragacanth / Gond Katira / Gum Katira Sap/ Badam Pisin / Almond Gum A very small handful
Basil Seeds 2 tsp
Boat Sterculia / Malva Nuts / Pang da Hai / Kembang Semangkuk /Umas Mango / Niranjan Phool 5 Seeds
Ice cubes As needed
Green liquid food color- optional 2 drops




Method:

  1.  Soak the Gum Tragacanth in a large bowl of water for 5- 7 hours (overnight), till it fills the water and looks like jelly.
  2. Also, soak the Boat Sterculia Seeds. It will grow into looking like something that totally lives under the sea. 🙂
  3. Remove the seed and the skin from the soaked mixture and keep only the ‘jelly-like’ part.
  4. Basil seeds need to be soaked till they expand/swell up as well.
  5. Add the milk to a saucepan and bring to a simmer. Stir in the condensed milk.
  6. Tear the washed Pandan leaves through the centre (to release scent and flavor) and add to the milk. Simmer 10 minutes, stirring occasionally.
  7. Take off the heat and refregerate till completely chilled.
  8. When time to serve, Add the honeydew melon to a blender and blend without water. Add the chilled Honeydew-Pandan Milk and blend again. You can add 2 drops of green food color if you like.
  9. To a 1.5 liter jug, add ice cubes, followed by add the soaked ingredients (you might not need to add it all).
  10.  Add the chillied Honey dew Milk to the capacity of the jug. Stir well!  Serve cold.

Notes:

  • If you dont have or dont like the flavor of Pandan, omit it.
  • Honeydew must be very fresh and blended only prior to mixing the drink.
  • Careful not to add to much ingredients for soaking. We want just a quarter part of the jug filled with these ingredients.
