Hainanese Chicken Rice – Quick Version
A quick and savory Chicken Rice, that everyone will like.
Ingredients:
Thai Fragrant Rice | 1½ cups | |
ginger, finely chopped | 2 tsp | |
garlic, finely chopped | 2 tsp | |
green onion (scallions), finely chopped | 2 tsp | |
made by dissolving 1 cube of chicken stock (I like Knorr) and 3 cups of water (Alternatively, use 3 cups home made chicken stock if you have it handy) | 3 cups chicken stock, | |
sunflower oil | 3 Tbsp |
To serve:
prepared chicken nuggets, store bought rottiserie chicken or baked chicken, soy sauce, crushed ginger. |
Method:
I use an electric rice cooker for best results. Alternatively you may use a non stick pot with lid.
- Wash and drain the rice.
- Heat the oil in the rice cooker.
- Add the ginger, garlic and green onion and saute till golden but not brown.
- Add the stock cube and mash till dissolved, (if using Knorr chicken cubes) and add the water. Alternatively, add the homemade stock.
- Add salt as needed. (If you’re using Knorr, you probably just need a dash).
- Bring the stock to a boil. Add the rice.
- For rice cooker: Close the rice cooker and turn the cooker off when it goes to warm setting. For stovetop pot: Cover pot and reduce heat till the water runs dry and the rice is cooked.
- To serve, fork up the rice till fluffy and drizzle some light soy sauce over it.
- Fry or bake a side of chicken nuggets/ tenders as desired and serve with chili-ginger sauce.
- You may garnish with the spring onion greens.

Notes:
- If using Rotisserie chicken, slice the chicken along with skin into thin strips. Crush ginger and place in a bowl with soya sauce. Allow to soak flavor for 10 minutes. Pour through a strainer over the chicken.
